A Munich Dunkel, Rover honors tradition by utilizing a tedious mashing process of primarily Dark Munich malts to create flavors and aromas of molten toffee, brown bread, mild chocolate, and caramel. A sturdy addition of Tettnanger hops provides balance and depth. A clean dark chestnut color and wispy off-white head only adds to the mouth-watering appeal of this beer. Unsurprisingly, the people behind the brewery have been influenced by both New Haven-style pizza and New York City-style pizza, and it shows. The charred, blistered, bubbly crust; the crispiness on the bottom and chewiness on the top; the mix of shredded and grated cheeses; and the use of seasonal, locally sourced ingredients all make for pies that may just bring some people here not for the beer but the pizza.

John is particularly adept at drawing the essence from fruit in a finished brandy. The majority of the fruit in our Eau de Vie is grown at our farm in Connecticut. Today we are introducing a new project that aims to find the limit of what is reasonably enjoyable in a hoppy beer. There is no doubt the idea of ‘more’ is appealing and utilized by breweries across the world, including Tree House. What value does ‘extra’ dry-hopping bring to the enjoyability of a beer? With this project, we will pull back the curtain and find out. We strive to pre-pack orders ahead of time as much as possible. On weekends, holidays and special release days there may be a wait.
Our in-house coffee program provides the ideal cold brew for John to help craft the perfect Coffee Liqueur. This in-house control carries real value, and far exceeds that of a contract-based approach. Eau de Vie is an unforgiving spirit that tests a distiller’s acumen.
There has been much chatter about the pizza that Tree House in Deerfield has been serving, and it’s easy to dismiss such talk, because conventional wisdom says that breweries are supposed to put beer first and food second. But the pizza served here (and now in Tewksbury and Sandwich as well) is nothing short of spectacular, even giving the legendary New Haven pizzerias a run for their money. Each location of Tree House has a different feel to it, and the fact that the Deerfield facility is housed in an office building could have caused it to have a generic feel. Instead, it’s something unique, because of all the thought that was put into its design. These beers are almost a decade in the making, and it is with great excitement and palpable joy that we are now able to share them with you.
We constructed this beer around hops we currently have plenty of access to, allowing us to re-brew it on a (relatively) consistent basis. We smell a ton of orange on the nose, with complimentary notes of peach and passionfruit. The flavor is similar with a blast of citrus fruit & orange quickly followed by spicy grapefruit, and earthy dankness.
We also have kiosks available on-site if you prefer to browse and place an order when you arrive. Cider to go must be ordered in advance and the number of orders is limited each day.
